Pumpkin season is in full effect: you could not escape this delicious fall vegetable if you tried (but why would anyone want to?). So, in order to embrace its reign and provide you with a way to stay warm during autumn and winter, Great Harvest in Butte has this delicious pumpkin soup recipe for you!

How to Prepare a Delicious Fall Pumpkin Soup 

Get Your Ingredients

  • 1/2 of a garlic clove (minced)
  • 1 kg of pumpkin (mashed)
  • 1 liter of chicken or vegetable stock
  • 2 onions (thinly chopped)
  • 9 g of parsley (chopped)
  • 30 ml of olive oil
  • 142 ml of double cream
  • Salt and pepper to your liking
  • Optional: fresh bread or croutons

Start Heating Up

Prepare a large saucepan by adding olive oil and putting it on a stove set to the highest intensity. Add in the stock, pumpkin, salt, pepper, onion and garlic, and wait until it boils. After it does, stir the mixture, lower the heat and let it sit there for 30 minutes.

Blend and Mix

Next up, you need to take small batches of the dense concoction and put them in the blender to make sure everything is mixed up nicely and to create a softer and more velvety soup.

Boil Again

Lastly, it's time to pour the soup back into the saucepan so it can boil again. Add in the double cream, bring the heat down to a lower intensity and cook the soup for 30 minutes. Stir regularly to keep it from sticking to the pan.
