Nothing beats a home-baked dessert to provide a comforting treat at the end of a tough day. If you're finding it tough to adjust to life back at work after the holidays, this recipe for banana raisin bread pudding courtesy of Great Harvest in Butte is sure to make everything better.

Ingredients (serves 6)

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup sugar
  • 1 tablespoon sugar
  • 2 ½ cups milk (preferably whole milk)
  • 12 ounces bread (cut into rough 1-inch chunks)
  • 3 banana (thickly sliced)
  • ½ cup raisins
  • ½ cup brandy or rum (optional)
  • Butter to grease the baking dish

Method

Preheat your oven to 350 degrees Fahrenheit and butter a shallow baking dish.

You can soak your raisins in brandy or rum for a few hours before adding them to your pudding to add another deep layer of flavor, or feel free to omit this step if you'd prefer.

Whisk the eggs, vanilla, salt and half a cup of sugar together in a large bowl until well-combined, then whisk in the milk. Add your bread, raisins and bananas and toss them around to combine everything together well. Set the bowl aside and give the bread time to absorb the liquid mixture. The time this will take depends on the type of bread you're using and its age - fresh bread will only need about ten minutes, but if your bread's a few days old it's best to leave it for around half an hour, stirring occasionally.

Transfer your bread mix to the greased baking dish and bake for around an hour. The pudding should turn a delightful shade of golden-brown, and a skewer inserted into the middle should come out clean. When it's done, remove it from the oven and allow it to cool for 10 minutes before serving (with a scoop of rum ; raisin ice cream if you'd like to make it extra-delicious).
